Chicken broth is very versatile, You can add it to a lot of homemade dishes such as soup, stew, stir-fries, rice (or risotto), noodles, sauces, pies, and casseroles. You can make chicken stock from scratch. I like to make stock after grilled chicken or Turkey with remaining bones.
I use it as a base for my favorite soup (of course), but also in any recipe that calls for chicken stock!
Ingredients
- 1-2 chicken or Turkey carcass
- 1 onion, halved
- 3 carrots
- 3 stalks celery
- 4 sprigs fresh parsley
- 2 sprigs of rosemary and thyme optional per
- 2 pieces of bay leaf
- 1 tablespoon black pepper
- 2 teaspoons salt
- 8-10 glasses of water
Instructions
- Cut the onion, carrot and celery four (including the Summit of carrot and celery if you have it)
- Place the carcass in a large pot and add the vegetables, salt, pepper, Bay leaves, and fresh herbs. Cover with water.
- Cover the pot to a boil with fire next.
- Once boiling, reduce heat to simmer partly uncovered for 3-4 hours, skimming as necessary.
- Strain the broth through a sieve mesh or cheesecloth. Discard the bones and vegetables.
- Refrigerate for 4 days or freeze the 2-3 month.
Recipe note
- You can add extra fat pieces such as a wing or leg. I often add the leftover drippings or even the rest of my stock sauce. Roasting the bones and onion with a little olive oil first will add extra flavor. I cook mine with a temperature of 400 ° F for about 25 minutes. The nutritional value is an estimate only.
