This recipe requires no time to prepare, best served hot. Can be made ahead but could be presented the next day.

Dirty rice is a staple of southern comfort food and it's easy to see why!

The tender meat is browned and sauteed with onions, peppers, celery and then finishes with a subtle and flavorful rice cajun seasoning to give it a complete meal!  

I love all kinds of food from Cajun cajun chicken and shrimp gumbo; I can't get enough of it! This dirty Rice is just one of the more favorite among my collection!

Regardless of where you are from, rice (especially in a casserole of rice) is really an entertaining dish! Dirty rice is a New Orleans staple and simple dishes combine the beef, sausage and chicken liver chop the peppers and onions.  Everything is seasoned with our favorite Cajun Seasoning and rice cooked to tender perfection.


Ingredients
  • 1 tablespoon olive oil
  • 8 oz lean ground beef
  • 8 oz bulk sausage
  • Chicken liver 1/2 cup chopped optional
  • 1 medium Onion diced
  • 1 green pepper, diced
  • 1 cup diced celery
  • 3 cloves chopped garlic
  • 1 1/2 teaspoon Cajun Seasoning
  • 1 1/2 cups white rice uncooked
  • 3 1//2 cup chicken I use low sodium broth
  • 2 pieces of bay leaf
  • salt and pepper to taste
  • green onion for garnish


Instructions
  • Heat the olive oil in a frying pan heat the oven or the heavy-bottomed Netherlands.
  • Add the beef, sausage and chicken liver (if using). Cook until no pink remains.
  • Add the onion, garlic, celery, green pepper, and Cajun Seasoning. Stir until softened, about 5 minutes.
  • Add rice, broth and bay leave. Next, to a boil, reduce heat and simmer with covered approximately 20-23 minutes or until rice is cooked.
  • Garnish with green onions and serve.


Recipe note
  • Freeze Your chicken livers for about 20-30 minutes to allow for easier slicing.


Some dirty rice recipe using different things such as carrots, potatoes, or mushrooms but I really prefer to just be ready only with traditional materials. If you want, you can add whatever vegetables you have handy for this recipe!

I serve it with chicken Fricassee and cover with the sauce.

This can be served with any food and praise. It is well loved by my family and asked for plenty. I hope your family loves it as we do.
