Ingredients
- Skinless chicken breast boneless 1 lb cut into inch pieces 1/2
- 1 tablespoon vegetable oil
- 1 teaspoon chopped garlic
- salt and pepper to taste
- 2 eggs
- 8 ounces rice noodles
- 1 cup bean sprouts
- 1/4 cups onions cut into 1-inch
- coriander 1/4 leaf Cup
- 1/4 cup chopped roasted salted peanuts
- 4 lime wedges
For the sauce:
- 1 tablespoon fish sauce
- 2 tablespoons sugar
- 1 1/2 teaspoons soy sauce
- 1 teaspoon rice vinegar
- 1 lime Juiced
- 2 tablespoons soy sauce
- 1 tablespoon water
Instructions
- In a medium bowl, whisk together the dressing ingredients. Set aside. Prepare rice noodles according to package directions.
- Heat the oil in a large pan was on medium-high heat. Add chicken to pan and season with salt and pepper to taste. Cook for 5-6 minutes, stirring occasionally until the chicken is browned and cooked through. Add the garlic to the Pan then cook for 30 seconds.
- Transfer the mixture to the chicken to one side of the Pan and add the egg to the empty side pot. Stir in eggs until scrambled and cooked about 3 minutes.
- Add rice noodles and sauce to the Pan, tossing to coat evenly. Stir in onions and bean sprouts.
