Ingredients
  • Skinless chicken breast boneless 1 lb cut into inch pieces 1/2
  • 1 tablespoon vegetable oil
  • 1 teaspoon chopped garlic
  • salt and pepper to taste
  • 2 eggs
  • 8 ounces rice noodles
  • 1 cup bean sprouts
  • 1/4 cups onions cut into 1-inch
  • coriander 1/4 leaf Cup
  • 1/4 cup chopped roasted salted peanuts
  • 4 lime wedges


For the sauce:
  • 1 tablespoon fish sauce
  • 2 tablespoons sugar
  • 1 1/2 teaspoons soy sauce
  • 1 teaspoon rice vinegar
  • 1 lime Juiced
  • 2 tablespoons soy sauce
  • 1 tablespoon water


Instructions
  • In a medium bowl, whisk together the dressing ingredients. Set aside. Prepare rice noodles according to package directions.
  • Heat the oil in a large pan was on medium-high heat. Add chicken to pan and season with salt and pepper to taste. Cook for 5-6 minutes, stirring occasionally until the chicken is browned and cooked through. Add the garlic to the Pan then cook for 30 seconds.
  • Transfer the mixture to the chicken to one side of the Pan and add the egg to the empty side pot. Stir in eggs until scrambled and cooked about 3 minutes.
  • Add rice noodles and sauce to the Pan, tossing to coat evenly. Stir in onions and bean sprouts.
  • Sprinkle with peanuts and cilantro mixture over noodles. To serve, garnish with lime wed
