Ingredients

  • 2 cups flour
  • 1/2 cups panko bread crumbs
  • 1/2 tsp garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon seasoning salt
  • 1/2 teaspoon black pepper
  • 3 eggs
  • 3 tablespoons water
  • 1 1/2 tablespoons oil
  • oil for frying
  • green onions


Sauce
  • 1/2 cup honey
  • 4 tablespoons light soy sauce
  • 4 large garlic cloves, crushed
  • 1 tablespoon finely diced ginger
  • 1/2 teaspoon chili flakes
  • 1/3 cups water


Instructions
  • Heat oil to 375 degrees f.


Sauce
  • Combine all sauce ingredients in a small saucepan. Bring to a boil, reduce heat and during the time of 15 minutes.


Chicken.
  • In a bowl mix the flour, seasonings and Panko bread crumbs. Set aside. In a separate bowl, whisk together eggs, 3 tablespoons water and 1 1/2 tablespoons oil.
  • Working with half the flour mixture at a time (see note below) dip each piece of chicken in the egg mixture and then flour. Dip into the egg a second time and then flour again to double-coat it. Carefully press the crumbs onto the chicken. Get rid of the excess. Place on a wire rack and continue until all the chicken is coated.
  • Fry chicken in small batches until crisp and cooked through approximately 5-6 minutes. Drain on paper towels.
  • Put the cooked chicken in a large bowl, pour the warm Vinaigrette and toss well to coat.
  • Top with green onions if desired then serve immediately.


Recipe note
  • When working with flour mixture, I found working with just half the time working at best. This makes the flour from getting clumped or wet.
  • Calories are calculated using 1 cup vegetable oil for frying.



Make sure that you do not boil sauce you down too much or it will become too thick to throw with tender chicken!
