Chicken Lo Mein Instructions

  1. Pound chicken breasts to 1/2 inch thick. Soak in Hoisin sauce for about 30 minutes (or up to 4 hours).
  2. Chop scallions and set the green part aside.
  3. Combine all sauce ingredients and mix well. Bake the chicken over medium heat for about 5 minutes on each side or until done. Slice diagonally.
  4. Cook noodles according to package directions (mine were "boil 1 minute").
  5. Heat oil in a large pan or wok over medium heat. Add scallions, ginger, and garlic. Cook until fragrant (about 1 minute). Add red pepper slices then cook for 1 minute.
  6. Add bean sprouts, cooked noodles, chicken slices, and sauce. Stir over medium heat so the sauce thickens (about 2 minutes). Top with scallion greens and pea shoots.
