What could be easier than cooking fried rice? Prepare the ingredients to require very little. All you need is cooked rice, egg, and salt to taste.

Rice is the staple food of most Asian countries such as China, India, Malaysia, and Thailand. It is the second highest yield of grain in the world after maize and can grow almost anywhere, even on the slopes of the mountain.

Rice is an excellent source of energy because of its high content of starch. It is also low in fat and cholesterol, easily digested, and contains a variety of important nutrients including protein, vitamin B, E, and potassium.

Although there are many types of rice, only three; long-grain, short-grain glutinous, and usually consumed. Long grain of the most popular and commonly used for fried rice. Short grain starchier, but soft and creamy when cooked. Glutinous rice is mainly used for loading and desserts.

How to Cook the rice:


Ingredients
  • 1 tablespoon canola oil
  • 2 cloves garlic minced
  • 2 teaspoons finely chopped ginger
  • 2 green onions sliced and separated
  • carrot 3/4 cup frozen or fresh diced
  • 3/4 cup frozen peas
  • 2 eggs cooked and chopped
  • 1 cup chopped cooked chicken or pork shrimp (optional)
  • 3 tablespoons soy sauce
  • 1/2 tsp sesame oil
  • 3 1/2 cups cold cooked white rice


Instructions
  • Heat the oil in a wok or nonstick skillet over medium-high heat. Add the garlic, ginger and white parts of the scallions. Cook until fragrant.
  • Add the carrots, peas & Cook until heated and softened.
  • Add the rice (and protein if using) continue to cook until slightly crisped and brown rice. Do not stir too much, you want to get a little caramelization.
  • Add the cooked egg, soy sauce & sesame oil.
  • Garnish with remaining green onion sesame seeds if desired.


If you are looking for chicken fried rice (or any protein at all) add protein, each cooked meat, including chicken, shrimp or beef would be a nice addition to this recipe!
