This recipe begins with Braised chicken tender perfection with vegetables and seasonings.  A simple cake made with kitchen ingredients simmered in the broth until tender and meaty.  This is a family favorite that will be asked over and over again! This is a recipe I learned from my mother when I was growing up. It took some time to get it like his and then I add my style to it and it was a hit with my family. My fiance says it's just like her grandmother. I thought that I would share with everyone. Enjoy!

Ingredients

BROTH
  • 1 chicken, cut into pieces
  • 1 onion
  • 3 large carrots cut into thirds
  • 3 stalks celery, cut into thirds
  • 8 cups low-sodium chicken broth
  • & salt pepper to taste
  • Bay leaf pinch poultry seasoning or optional
  • DUMPLING
  • 1 3/4 cups all-purpose flour, plus extra for dusting
  • 1/3 cups shortening
  • 1/2 teaspoon baking powder
  • 3/4 cups milk
  • 1/2 teaspoon salt
  • OTHER
  • 4 tablespoons cornstarch
  • parsley garnish



Instructions
  • Combine chicken, onion, carrot, and celery in a large pot. Season to taste.
  • Add the chicken broth. Bring to a boil, reduce heat and simmer covered 45-60 minutes or until chicken is tender. While broth is simmering, prepare the cake below.
  • Remove chicken and vegetables from the broth. Discard skin and bones and chop the rest of the chicken, set aside.
  • Gently Add dumplings into the broth. Simmer 15-20 minutes or until tender.
  • Stir the chicken (and vegetables if desired) into the broth and cook approximately 2-3 minutes or until heated through.


DUMPLING
  • Combine the flour, baking powder, salt and shortening with a fork until mixed in shortening.
  • Add the milk a little at a time and stir until combined (you may not need all of it, you want the dough is soft but not sticky).
  • Knead a few times on a floured surface until the dough is smooth.
  • Generously flour Your surface and roll the dough to thick/1/8. Cut dough 1″ x 2″. Generously flour to avoid sticking.
  • Cook in the broth as directed above.

TO THICKEN THE BROTH (OPTIONAL)
  • In a small bowl, combine 4 tablespoons cornstarch with 3 tablespoons water.
  • Add to the boiling broth a little at a time stirring to achieve desired consistency.
