I enjoyed the party theme so this recipe is perfect for a chicken Fajita seasoning Mexico. This chicken recipe has proven to be a winner, particularly with children. When I'm not going home for dinner, I usually cook it. My kids ate it and said it was really good and always ask me to make it again. This is great for busy moms.

Ingredients
  • 3 chicken breasts
  • 1 medium onion
  • 1 lime
  • 3 bell peppers, red, yellow, green or orange
  • 3 tablespoons olive oil, divided
  • 1 teaspoon chili powder
  • 1/2 teaspoons smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoons cumin
  • salt to taste


Instructions
  • Cut the onion into strips sliced & peppers.
  • In a separate bowl, combine 1 tablespoon of the olive oil, the juice of 1/2 lime, chili powder, paprika, onion powder, pepper, cumin, and salt. Cut chicken and toss with the Spice mixture.
  • Heat 1 tablespoon olive oil over medium-high. Add 1/2 from the chicken and cook until just cooked through approximately 3-5 minutes. Remove from pan and set aside. Repeat with the remaining chicken.
  • Set aside chicken and add 1 tablespoon oil to the pan. Drain onions and cook 1 minute. Add the sliced peppers and cook an additional 2 minutes or just until hot. Add the chicken back to the Pan then stir again to combine.
  • An extra squeeze of lime overtops and serve over tortilla.


Recipe note
  • Optional: If I'm serving this to kids, I discovered the garlic soaking in cold water for a bit in need of a little  "bite you" from them.

Good chicken fajitas marinade can be hard to come by in the supermarket shelves, so I always make it my own. Make your own seasoning is very easy and gives you control over the spices and ingredients that you eat. My basic rules to produce two good chicken fajitas marinade: 1) always use fresh ingredients, and 2) the longer you marinate it better.
