Spinach Artichoke Chicken Casserole is a delicious cream cheese casserole and one the whole family will love.

If you like artichoke spinach, You will love this Spinach Artichoke Chicken Casserole. It is basically a chicken breast topped with spinach and artichoke dip mix and cheese fish sauce and Bake until brown and bubbly.

The combination of spinach and artichokes with chicken in the pot is so good that even the kids will love it, and you don't have to run after they eat their vegetables because you can easily hide them under all the cheese.

I tried this recipe a couple of times before sharing it with you. My problem with grilled chicken breast is that cake can dry it sometimes, and it can be rubbery, mainly the leftovers. So my first attempt was to bake this recipe without any sauce, but we hope for better results. Definitely, think it all there, but that chicken breast has dried up a bit around the edges and the next day it's just not good enough.


Ingredients
  • 4 chicken breasts
  • 1 teaspoon chili flakes
  • 2 cloves garlic minced
  • 1 teaspoon of salt is divided
  • 2 tablespoons butter
  • 1 1/2 tablespoons plain flour
  • 1 cup milk
  • 1/2 cup cream cheese
  • 10 oz frozen spinach is defrosted
  • 6 oz Artichoke hearts or Quarters roughly chopped
  • 3/4 cup grated Mozzarella cheese


Instructions
  • Add the chicken breasts, chili flakes, chopped garlic, and 1/2 teaspoon salt to the baking sheet. Rub the spices on both sides of the chicken breasts and arrange them side by side in a baking dish. Set aside to marinate. Preheat the oven to 400F.
  • Melt the butter in a frying pan then add the flour. On medium heat, saute the flour for a minute and add the milk slowly while stirring continuously to make sure there is no lumps form. Keep stirring until the sauce comes to a boil and begins to thicken. Whisk in cream cheese and set aside.
  • Squeeze the defrosted spinach to remove any additional water. Add the spinach, artichoke hearts and remaining 1/2 teaspoon salt into a bowl and stir.
  • Spread the spinach artichoke mixture over each chicken breast, pour the sauce all over and bake for 35 minutes. On 25 minutes, sprinkle mozzarella over chicken and place back in the oven for 10 minutes. Serve hot.
