Summer is subsiding faster than I wanted and with the school began only a few weeks, I've been filling my cellar dinner with easy recipes I can make when it gets super busy with activities. Walking around from school to the baseball field for dance practice and home again doesn't leave much time to make dinner at home. Chicken Pot Pie soup recipe this crockpot dinner is one of my absolute favorites because it's pretty much ready when I walked in the door.


Ingredients

  • 1 1/2 cup chopped Onions
  • 1/2 cup chopped celery
  • 2 cloves garlic, peeled and crushed
  • chicken breast Skinless boneless 3
  • 2 cups low-sodium chicken broth
  • 2 teaspoons chopped fresh thyme
  • 1/2 tsp salt
  • 1/2 teaspoon fresh ground pepper
  • 1 cup half and half
  • 3 tablespoons cornstarch
  • 1 1/2 cup frozen peas and carrots
  • 1 refrigerated pie crust is optional

Instructions
  • In the bottom of the slow cooker, layer the onions, garlic cloves, and celery. Place the chicken breasts on top of the vegetables and pour over the chicken stock. Sprinkle chicken with thyme, salt, and pepper.
  • Cover the slow cooker and cook about 3 hours on high or about 6 hours on low.
  • Remove the chicken from the slow cooker and then broken into bite-sized pieces with a fork. Return to slow cooker. Stir in the peas and carrots. 
  • Beat half and a half together with corn flour. Pour the mixture into the slow cooker and stir so intermingled with evenly. Cook for an additional 20 minutes.
  • If using pie crust, while still cooking soup, roll out refrigerated pie crust on a baking sheet lined with parchment paper and bake according to the instructions the package. Cool to room temperature and cut into bite-sized splits.
  • Ladle the soup into bowls and top with pie crust to collapse. Sprinkle with fresh thyme and parsley, if desired. Serve immediately.
