Cauliflower fried rice is one of my entry to the menu for lunch! As much as I love the homemade fried rice, sometimes I just look for a lighter alternative!
Switch the cauliflower rice to white rice (or even chocolate) in this recipe is not only delicious, but it also makes for a more low carb low cal cauliflower fried rice that I couldn't get enough!
Fried cauliflower rice recipe is easy to make and the end result is an amazing dish that works well as a side and main dishes!
When cooked, cauliflower can act similarly to rice, by taking in all the flavors of the spices that you cook with. Cauliflower fried rice is a weekday dinner, and a great way to use any leftover meat or vegetables in Your refrigerator.
I love making this when I have to clean the leftovers in my refrigerator. Shrimp, pork, beef, celery, bell pepper, carrot ... a list of amazing things that you can add is not over!
Ingredients
- 1 lb. cauliflower, riced
- 1 cup finely diced carrots
- 1 cup frozen peas
- 1 tablespoon oil
- 2 cloves garlic, minced
- 2 teaspoons finely chopped ginger
- 2 eggs
- 1 tablespoon milk
- 2 tablespoons soy sauce
- 1 green onion, chopped
Instructions
- Whisk together egg & milk. Pour in a large saucepan over medium heat. Cook just until set, remove and set aside.
- Heat the oil in a pan not stick over medium heat. Add the garlic and cook until the ginger & fragrant. Add carrots, Cook the peas & 5 extra minutes.
- Add the riced raw cauliflower and continue to cook until the cauliflower is slightly softened (about 5-6 minutes). Stir in eggs, soy sauce & onions.
- Serve hot.
Riced cauliflower doesn't need to be boiled or cooked before it's added to Your dish, so this ends up taking much less time than the traditional fried rice makes!
Perfect for a quick and easy meal.
Fried cauliflower rice kept very well in the refrigerator in an airtight container. It also reheats Well! I have had great success with making this for Lunches throughout the week!
