- 2 carrots, diced
- 1 small onion
- 2 stalks celery diced
- 5 tablespoons flour, divided

- 1/4 teaspoon Sage

- 4 cups chicken stock or chicken broth
- 1 cup green beans or peas

Instructions
- In a large saucepan or dutch oven, Brown the chicken in 1 tablespoon olive oil (should not be cooked through). Remove from pan and set aside.
- Cook the onion, carrot, and celery in olive oil for about 3 minutes or until the onions are slightly softened. Stir in 3 tablespoons of flour, seasonings and salt & pepper to taste. Cook over medium heat about 2 minutes.
- Add the potatoes, sweet, red bell pepper, white wine, chicken broth and browned. Bring to a boil, small fire and simmer are currently closed for about 30 minutes.
- Remove the lid and stir in green beans and cream. Thicken if desired (below) and let simmer about 10 extra minutes to unfold.
- Thicken: in a jar combine the remaining 2 tablespoons flour and 1 cup water or broth. Shake very well (make sure there are no lumps) and add a little at a time until boiling soup to achieve desired consistency.
